- 1 cup granulated sugar
- 2 large eggs (room temperature)
- ½ cup unsalted butter (softened)
- 1 cup whole milk
- ½ cup raspberry jam
- 1 cup heavy cream
- Red food coloring (to desired color)
Instructions
- Preheat your oven to 350°F (175°C). Line a cupcake pan with paper liners.
- In a mixing bowl, whisk together flour, cocoa powder, baking powder, and sugar until well combined.
- In another bowl, cream the softened butter until smooth. Add eggs one at a time, mixing well after each addition. Then mix in the milk until smooth.
- Gradually combine the dry ingredients into the wet mixture, stirring gently until just mixed.
- Spoon the batter into each cupcake liner about two-thirds full. Add half a teaspoon of raspberry jam into each filled liner.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean. Allow to cool completely.
- Whip heavy cream with red food coloring until thick and fluffy.
- Pipe the frosting generously onto each cooled cupcake.
