Description

Ingredients

  • 1 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 cup granulated sugar
  • 2 large eggs (room temperature)
  • ½ cup unsalted butter (softened)
  • 1 cup whole milk
  • ½ cup raspberry jam
  • 1 cup heavy cream
  • Red food coloring (to desired color)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a cupcake pan with paper liners.
  2. In a mixing bowl, whisk together flour, cocoa powder, baking powder, and sugar until well combined.
  3. In another bowl, cream the softened butter until smooth. Add eggs one at a time, mixing well after each addition. Then mix in the milk until smooth.
  4. Gradually combine the dry ingredients into the wet mixture, stirring gently until just mixed.
  5. Spoon the batter into each cupcake liner about two-thirds full. Add half a teaspoon of raspberry jam into each filled liner.
  6. Bake for 18-20 minutes or until a toothpick inserted comes out clean. Allow to cool completely.
  7. Whip heavy cream with red food coloring until thick and fluffy.
  8. Pipe the frosting generously onto each cooled cupcake.
