- 1 lb ground turkey (93% lean)
- 4 medium zucchinis (sliced lengthwise)
- 1 cup ricotta cheese (whole milk)
- 2 cups shredded mozzarella cheese (part-skim)
- 2 cups marinara sauce (your choice)
- 1/4 cup fresh basil (chopped)
- 1 tsp garlic powder
- 1 tbsp Italian seasoning
Instructions
- Preheat your oven to 375°F (190°C). Lightly spray a 9×13-inch baking dish with nonstick cooking spray.
- Slice the zucchinis lengthwise into thin strips and sprinkle lightly with salt. Let them sit on paper towels to remove excess moisture.
- In a large skillet over medium heat, add the ground turkey. Cook until browned, about 6-8 minutes, breaking it up as it cooks. Drain any excess fat if needed.
- Stir in marinara sauce, garlic powder, and Italian seasoning. Allow to simmer for about five minutes.
- Spread a thin layer of marinara sauce on the bottom of the prepared baking dish. Layer half of the zucchini slices, followed by half of the turkey mixture, and spread half of the ricotta cheese over this layer. Repeat with remaining zucchini, turkey mix, marinara sauce, and top with shredded mozzarella.
- Cover with aluminum foil and bake for about 30 minutes. Remove foil during the last ten minutes to allow cheese to bubble.
