  • 2 large zucchinis (810 inches long)
  • 1 lb lean ground turkey
  • 1 medium red onion, chopped
  • 3 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup shredded mozzarella cheese (or grated Parmesan)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish with nonstick cooking spray.
  2. Cut each zucchini in half lengthwise and scoop out the center to create a hollow cavity for stuffing.
  3. In a skillet over medium heat, sauté the chopped red onion and minced garlic until fragrant, about 2-3 minutes.
  4. Add the ground turkey to the skillet and cook until browned. Stir in the reserved zucchini flesh and canned diced tomatoes. Season with salt, pepper, and herbs as desired.
  5. Once the filling has cooled slightly, spoon it generously into each zucchini half.
  6. Sprinkle shredded mozzarella or grated Parmesan over each stuffed zucchini boat.
  7. Place the stuffed zucchinis in the preheated oven and bake for about 25-30 minutes until tender and cheese is bubbly and golden.
