- 2 large zucchinis (8–10 inches long)
- 1 lb lean ground turkey
- 1 medium red onion, chopped
- 3 garlic cloves, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup shredded mozzarella cheese (or grated Parmesan)
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a baking dish with nonstick cooking spray.
- Cut each zucchini in half lengthwise and scoop out the center to create a hollow cavity for stuffing.
- In a skillet over medium heat, sauté the chopped red onion and minced garlic until fragrant, about 2-3 minutes.
- Add the ground turkey to the skillet and cook until browned. Stir in the reserved zucchini flesh and canned diced tomatoes. Season with salt, pepper, and herbs as desired.
- Once the filling has cooled slightly, spoon it generously into each zucchini half.
- Sprinkle shredded mozzarella or grated Parmesan over each stuffed zucchini boat.
- Place the stuffed zucchinis in the preheated oven and bake for about 25-30 minutes until tender and cheese is bubbly and golden.
