  • 3/4 cup brown sugar, packed
  • 2 large eggs, room temperature
  • 2 tsp vanilla extract
  • 1 tsp peppermint extract
  • 1/4 tsp red food coloring (optional)
  • 1/2 cup crushed candy canes for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat the softened butter with granulated sugar and brown sugar until light and fluffy.
  4. Incorporate eggs one at a time into the butter-sugar mixture. Then stir in vanilla extract and peppermint extract until well combined.
  5. Gradually mix in the dry ingredients until just combined; avoid over-mixing.
  6. Divide the dough into two bowls: leave one as is and add red food coloring to the second bowl. Drop spoonfuls of both doughs onto each other on the baking sheet and swirl gently with a toothpick.
  7. Bake for about 10-12 minutes or until edges are lightly golden but centers are still soft. Let cool before sprinkling with crushed candy canes.
