  • 1 pound fresh green beans, trimmed
  • 1/2 cup sliced or slivered almonds
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 2 tablespoons freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Wash and trim the ends off the green beans. Blanch them in boiling water for about 2 minutes until tender-crisp, then plunge into an ice bath to stop cooking.
  2. In a skillet over medium heat, melt 1 tablespoon of butter. Add sliced almonds and toast for about 3–4 minutes until golden brown, stirring frequently.
  3. Remove the toasted almonds from the skillet. In the same skillet, melt another tablespoon of butter. Add minced garlic and sauté for about 1 minute until fragrant.
  4. Add blanched green beans back into the skillet with garlic. Sauté for about 2 minutes, tossing everything together while seasoning with salt and pepper.
  5. Squeeze fresh lemon juice over the sautéed beans and toss again to combine.
  6. Transfer the green bean almondine to a serving platter or individual plates, topping with toasted almonds for a touch of elegance.
