- 1 pound fresh green beans, trimmed
- 1/2 cup sliced or slivered almonds
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 2 tablespoons freshly squeezed lemon juice
- Salt and pepper to taste
Instructions
- Wash and trim the ends off the green beans. Blanch them in boiling water for about 2 minutes until tender-crisp, then plunge into an ice bath to stop cooking.
- In a skillet over medium heat, melt 1 tablespoon of butter. Add sliced almonds and toast for about 3–4 minutes until golden brown, stirring frequently.
- Remove the toasted almonds from the skillet. In the same skillet, melt another tablespoon of butter. Add minced garlic and sauté for about 1 minute until fragrant.
- Add blanched green beans back into the skillet with garlic. Sauté for about 2 minutes, tossing everything together while seasoning with salt and pepper.
- Squeeze fresh lemon juice over the sautéed beans and toss again to combine.
- Transfer the green bean almondine to a serving platter or individual plates, topping with toasted almonds for a touch of elegance.
