- 1 ½ cups crushed Oreo cookies
- ½ cup unsalted butter, melted
- 1 box (15.25 oz) red velvet cake mix
- 16 oz cream cheese, softened
- 1 cup sour cream
- 1 cup granulated sugar
- 3 large eggs, at room temperature
- 1 cup crushed Oreo cookies (for mixing in)
- 1 cup heavy whipping cream
- ¼ cup powdered sugar (optional)
- Remaining crushed Oreos (for garnish)
Instructions
- Preheat your oven to 325°F (160°C). Grease a springform pan with cooking spray.
- In a bowl, combine crushed Oreos and melted butter. Mix until well combined.
- Press the Oreo mixture firmly into the bottom of the prepared springform pan.
- In a large bowl, beat together softened cream cheese and granulated sugar until smooth.
- Add sour cream and eggs one at a time, mixing well after each addition.
- Gently fold in half of your crushed Oreos.
- Stir in the red velvet cake mix until fully combined and smooth.
- Pour the cheesecake mixture over the crust in your springform pan.
- Bake for about 55-60 minutes or until set but slightly jiggly in the center.
- Turn off the oven and leave the cheesecake inside with the door ajar for an hour to cool gradually.
- Once cooled to room temperature, refrigerate for at least four hours or overnight before serving.
- Whip heavy cream with powdered sugar until stiff peaks form. Spread over the top of your cheesecake along with remaining crushed Oreos before serving.
