  • 1 ½ cups crushed Oreo cookies
  • ½ cup unsalted butter, melted
  • 1 box (15.25 oz) red velvet cake mix
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup granulated sugar
  • 3 large eggs, at room temperature
  • 1 cup crushed Oreo cookies (for mixing in)
  • 1 cup heavy whipping cream
  • ¼ cup powdered sugar (optional)
  • Remaining crushed Oreos (for garnish)

Instructions

  1. Preheat your oven to 325°F (160°C). Grease a springform pan with cooking spray.
  2. In a bowl, combine crushed Oreos and melted butter. Mix until well combined.
  3. Press the Oreo mixture firmly into the bottom of the prepared springform pan.
  4. In a large bowl, beat together softened cream cheese and granulated sugar until smooth.
  5. Add sour cream and eggs one at a time, mixing well after each addition.
  6. Gently fold in half of your crushed Oreos.
  7. Stir in the red velvet cake mix until fully combined and smooth.
  8. Pour the cheesecake mixture over the crust in your springform pan.
  9. Bake for about 55-60 minutes or until set but slightly jiggly in the center.
  10. Turn off the oven and leave the cheesecake inside with the door ajar for an hour to cool gradually.
  11. Once cooled to room temperature, refrigerate for at least four hours or overnight before serving.
  12. Whip heavy cream with powdered sugar until stiff peaks form. Spread over the top of your cheesecake along with remaining crushed Oreos before serving.
