Description

Warm, comforting, and packed with flavor, this Sausage and Rice Casserole is the perfect dish for busy weeknights or cozy gatherings.

Ingredients

Scale
  • 1 pound Italian sausage (mild or spicy)
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup bell peppers, chopped (mix of colors)
  • 1 medium onion, chopped
  • 1 tsp garlic powder

Instructions

  1. 1. Preheat Your Oven: Preheat your oven to 350°F (175°C). Spray a large baking dish with nonstick cooking spray.
  2. 2. Brown the Sausage: In a skillet over medium heat, crumble and cook the Italian sausage until browned. Drain excess fat if necessary.
  3. 3. Sauté the Vegetables: In the same skillet, add chopped bell peppers and onions; sauté until tender and fragrant, about five minutes.
  4. 4. Mix It All Together: In your baking dish, combine browned sausage, sautéed vegetables, rice, diced tomatoes (with juice), garlic powder, and chicken broth. Stir until well mixed.
  5. 5. Bake It: Cover tightly with aluminum foil and bake in the preheated oven for about 30 minutes.
  6. 6. Uncover & Serve: Remove the foil for the last ten minutes of baking to achieve a golden top. Serve hot.
