- 2 medium zucchinis, spiralized
- 4 cloves garlic, minced
- 3 tbsp extra virgin olive oil
- 1 cup cherry tomatoes, halved
- 1/2 tsp red pepper flakes

- Salt and pepper to taste
Instructions
- Spiralize the zucchinis into noodles and set aside.
- In a large skillet over medium heat, add olive oil. When shimmering, add minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant.
- Add shrimp to the skillet. Cook for approximately 3 minutes on each side until they are pink and opaque.
- Stir in the zucchini noodles and cherry tomatoes. Cook for an additional 3 minutes until tender but still slightly crunchy.
- Season with salt and pepper to taste. Toss everything together and let it mingle on low heat for another minute.
- Transfer to plates and garnish with fresh herbs. Drizzle any remaining olive oil over each serving.
