Instructions
- Thinly slice the red onions using a sharp knife or mandoline for even cuts.
- In a saucepan, combine equal parts white vinegar and water. Add sugar and salt, then heat over medium until dissolved.
- Place the sliced onions into clean glass jars. For added flavor, include any optional spices you desire.
- Pour the hot brine over the onions in the jars until they are fully submerged.
- Allow the jars to cool at room temperature before sealing them with lids.
- Store in the refrigerator for at least one hour (overnight is best) to allow flavors to develop.
