  • 2 medium sweet potatoes (about 1 lb), peeled and cubed
  • 1 can (15 oz) black beans, drained and rinsed
  • 3 tbsp fresh lime juice
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1/4 cup fresh cilantro, chopped (or parsley)
  • 1 cup panko breadcrumbs
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 400°F (200°C). Toss the cubed sweet potatoes with olive oil and salt on a baking sheet. Roast for 25-30 minutes until fork-tender.
  2. Let the roasted sweet potatoes cool slightly, then mash them in a large bowl until smooth but slightly chunky.
  3. Add the drained black beans (lightly mashed), lime juice, garlic powder, chili powder, cilantro, and panko breadcrumbs to the bowl. Mix well until fully combined.
  4. Using your hands or an ice cream scoop, form the mixture into patties about three inches wide and one inch thick. Place them on a parchment-lined baking sheet.
  5. Cover the patties with plastic wrap and refrigerate for at least 30 minutes to firm up.
  6. Heat olive oil in a large skillet over medium heat. Cook each patty for about four minutes per side or until golden brown and crispy.
