- 1 tsp chili powder

- 1 cup panko breadcrumbs

Instructions
- Preheat your oven to 400°F (200°C). Toss the cubed sweet potatoes with olive oil and salt on a baking sheet. Roast for 25-30 minutes until fork-tender.
- Let the roasted sweet potatoes cool slightly, then mash them in a large bowl until smooth but slightly chunky.
- Add the drained black beans (lightly mashed), lime juice, garlic powder, chili powder, cilantro, and panko breadcrumbs to the bowl. Mix well until fully combined.
- Using your hands or an ice cream scoop, form the mixture into patties about three inches wide and one inch thick. Place them on a parchment-lined baking sheet.
- Cover the patties with plastic wrap and refrigerate for at least 30 minutes to firm up.
- Heat olive oil in a large skillet over medium heat. Cook each patty for about four minutes per side or until golden brown and crispy.
