  • 1 fresh lemon (juice and zest)

Instructions

  1. Rinse the long-grain white rice under cold water until the water runs clear. Cook according to package instructions, typically using two cups of water per cup of rice.
  2. In a large skillet, heat the vegetable oil over medium heat. Add mustard seeds; once they start popping, add curry leaves and sauté until fragrant.
  3. Add turmeric powder and salt (approximately one teaspoon) to the skillet. Stir for about thirty seconds to release the spices' aromas.
  4. Once the rice is cooked and slightly cooled, gently fold it into the skillet with the sautéed spices. Squeeze in the juice of one lemon and add its zest, mixing until all grains are coated.
