- 8 oz fusilli or rotini pasta
- 1 cup heavy cream
- 1 cup roasted red peppers (jarred or homemade)
- 1/2 cup freshly grated Parmesan cheese
Instructions
- Preheat your oven to 400°F (200°C).
- Cut chicken breasts into bite-sized pieces and pat dry with paper towels.
- In a large bowl, toss chicken with salt, black pepper, and lemon juice. Let marinate while preparing the pasta.
