- 5–6 large yellow onions
- 6 cups low-sodium vegetable broth
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 baguette, sliced into thick pieces
- 2 cups shredded Gruyère cheese
Instructions
- Thinly slice the yellow onions and place them into your slow cooker.
- Pour the vegetable broth over the onions and stir gently.
- Add the olive oil, salt, black pepper, and thyme. Mix well to combine.
- Cover the slow cooker and set it on low heat for about 8 hours until the onions are caramelized and tender.
- About 30 minutes before serving, preheat your oven to broil. Arrange baguette slices on a baking sheet and toast until golden brown.
- Ladle the soup into oven-safe bowls. Top each bowl with toasted baguette slices and generously sprinkle shredded Gruyère cheese on top. Place under the broiler for 3-5 minutes until cheese is melted and bubbly.
