  • 34 boneless, skinless chicken breasts
  • 3 cups low-sodium chicken broth
  • 3 cloves fresh garlic, minced
  • 1 medium onion, chopped
  • 2 cups diced carrots
  • 1 cup chopped celery
  • Salt and pepper to taste
  • 1 tsp dried thyme (optional)
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 cup whole milk
  • 4 tbsp melted butter
  • 1/2 tsp salt

Instructions

  1. Set your Instant Pot to sauté mode. Add olive oil, chopped onion, minced garlic, diced carrots, and chopped celery. Sauté for about 3-4 minutes until softened.
  2. Add boneless chicken breasts to the pot along with low-sodium chicken broth. Season with salt, pepper, and thyme if using. Close the lid securely.
  3. Pressure cook on high for 10 minutes. After cooking, perform a quick release of pressure and carefully open the lid.
  4. In a mixing bowl, combine all-purpose flour, baking powder, whole milk, melted butter, and salt until just mixed to form a thick batter.
  5. Spoon dollops of the dumpling mixture over the cooked chicken and broth in the Instant Pot. Securely close the lid again.
  6. Set to pressure cook for another 5 minutes. Once done, allow for natural pressure release for an additional 5 minutes before opening.
  7. Serve hot in bowls with plenty of broth drizzled over the top.
