- 3–4 boneless, skinless chicken breasts
- 3 cups low-sodium chicken broth
- 3 cloves fresh garlic, minced
- 1 medium onion, chopped
- 2 cups diced carrots
- 1 cup chopped celery
- Salt and pepper to taste
- 1 tsp dried thyme (optional)
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1 cup whole milk
- 4 tbsp melted butter
- 1/2 tsp salt
Instructions
- Set your Instant Pot to sauté mode. Add olive oil, chopped onion, minced garlic, diced carrots, and chopped celery. Sauté for about 3-4 minutes until softened.
- Add boneless chicken breasts to the pot along with low-sodium chicken broth. Season with salt, pepper, and thyme if using. Close the lid securely.
- Pressure cook on high for 10 minutes. After cooking, perform a quick release of pressure and carefully open the lid.
- In a mixing bowl, combine all-purpose flour, baking powder, whole milk, melted butter, and salt until just mixed to form a thick batter.
- Spoon dollops of the dumpling mixture over the cooked chicken and broth in the Instant Pot. Securely close the lid again.
- Set to pressure cook for another 5 minutes. Once done, allow for natural pressure release for an additional 5 minutes before opening.
- Serve hot in bowls with plenty of broth drizzled over the top.
