Description

Halloween Vampire Bite Cupcakes are a spooktacular treat filled with raspberry jam and topped with creamy frosting. These spooky delights are perfect for any Halloween celebration!

  • ½ cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup milk (or plant-based milk)
  • ½ cup unsalted butter, melted
  • 1 tsp vanilla extract
  • ½ cup raspberry jam
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tbsp milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, sift together flour, cocoa powder, baking powder, and granulated sugar.
  3. In another bowl, whisk together eggs, milk, melted butter, and vanilla extract until well blended.
  4. Gradually pour the wet mixture into the dry ingredients while stirring gently until just combined.
  5. Fill each cupcake liner about two-thirds full with batter. Bake for 18-20 minutes or until a toothpick inserted comes out clean. Allow them to cool completely on a wire rack.
  6. After cooling, use a small knife or cupcake corer to remove a small section from each cupcake's center.
  7. Fill each cavity generously with raspberry jam.
  8. In a mixing bowl, beat softened butter until creamy. Gradually add powdered sugar while mixing on low speed.
  9. Add milk and vanilla extract; continue mixing until fluffy and well combined.
  10. Pipe frosting over each cupcake using a star tip to create an enticing swirl.
