- 3–4 lb beef chuck roast
- 1 large sweet onion, finely chopped
- 4 cloves garlic, minced
- 2 tbsp smoked paprika
- 1 cup BBQ sauce
- 1/2 cup apple cider (as a bourbon substitute)
- 2 tbsp brown sugar
- 1 tsp salt (adjust to taste)
- 1/2 tsp black pepper (adjust to taste)
Instructions
- Preheat your oven to 300°F (150°C).
- In a large skillet over medium-high heat, add oil and sear the beef chuck roast on all sides until golden brown, about 4 minutes per side.
- In a slow cooker or Dutch oven, combine the seared beef with chopped onions, minced garlic, smoked paprika, BBQ sauce, and apple cider. Ensure the beef is well-coated.
- Cover and cook on low heat for approximately 6 hours (or about 3 hours in the oven) until tender.
- Remove the beef from the pot and shred it using two forks. Mix it back into the sauce before serving.
