Za’atar Roasted Halloumi & Autumn Veggies is a vibrant, flavorful dish that celebrates the essence of fall with roasted seasonal vegetables and aromatic halloumi cheese.


Ingredients

  • 8 oz halloumi cheese, sliced into ½ inch thick slabs
  • 2 cups mixed autumn vegetables (butternut squash, Brussels sprouts, carrots), chopped
  • 2 tbsp za’atar spice blend
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare the Vegetables: In a bowl, toss chopped autumn vegetables with olive oil, salt, pepper, and half of the za’atar spice blend until well-coated.
  3. Arrange on Baking Sheet: Spread the seasoned vegetables evenly on one side of the prepared baking sheet.
  4. Season Halloumi: Drizzle olive oil over halloumi slabs and sprinkle with the remaining za’atar spice blend.
  5. Combine and Roast: After roasting the veggies for about 15 minutes, add halloumi slices to the other side of the baking sheet. Return everything to the oven and roast for an additional 15-20 minutes until golden brown and crispy.
  6. Serve: Transfer to plates and drizzle with any remaining olive oil before enjoying.
