Ingredients

  • 4 bone-in lamb chops (1-inch thick)
  • 4 cloves garlic, minced
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 2 cups frozen peas
  • 2 tbsp fresh mint leaves, chopped

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly coat it with nonstick cooking spray.
  2. In a bowl, combine minced garlic, olive oil, salt, and pepper. Rub this mixture all over the lamb chops and let them marinate for about 15 minutes.
  3. Place the seasoned lamb chops on one side of the prepared baking sheet, ensuring they have space to roast properly.
  4. Roast the lamb chops in the preheated oven for about 20 minutes or until they reach your desired doneness (135°F/57°C for medium-rare).
  5. After about 10 minutes of roasting, add frozen peas to the other side of the baking sheet. Drizzle them with olive oil and sprinkle with salt.
  6. Once cooked through, remove from the oven and sprinkle fresh mint over both the lamb chops and peas before serving.
