Description

Moroccan Lentil & Apricot Stew is a nourishing dish that combines the sweetness of apricots and the earthiness of lentils, enveloped in a fragrant spice blend for a comforting meal.

  • 1 cup green or brown lentils
  • 1 cup plump dried apricots, chopped
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 2 medium carrots, chopped
  • 4 cups low-sodium vegetable broth
  • 1 cinnamon stick
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • Salt and pepper to taste

Instructions

  1. Sauté the Aromatics: Heat olive oil in a large pot over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in minced garlic and cook for another minute until fragrant.
  2. Add Carrots: Toss in the chopped carrots and stir for about 3 minutes until they begin to soften.
  3. Combine Lentils and Spices: Add the lentils along with cumin and coriander. Stir well to coat the lentils with spices.
  4. Pour in Broth and Apricots: Add vegetable broth to cover by about an inch; include the chopped apricots and cinnamon stick. Bring to a boil, then reduce heat to simmer for about 30 minutes.
  5. Check Consistency: After simmering, stir the stew. If it’s too thick, add more broth or water until desired consistency is reached.
  6. Adjust Seasoning: Taste and season with salt and pepper as needed before serving.
