  • 34 lbs pork loin roast
  • 3 fresh apples (preferably Granny Smith)
  • 1 large onion
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 5 fresh sage leaves
  • 2 tsp ground cinnamon
  • 1 cup low-sodium chicken broth
  • 2 tbsp balsamic vinegar

Instructions

  1. Preheat your oven to 375°F (190°C). Prepare a roasting pan by spraying it with nonstick cooking spray.
  2. Season the pork loin generously with salt and pepper. Heat olive oil in a skillet over medium-high heat until shimmering. Sear the pork on all sides until golden brown, about three minutes per side.
  3. Transfer the seared pork to the roasting pan. Chop the apples and onion, then arrange them around the pork. Sprinkle fresh sage leaves on top.
  4. In a bowl, combine chicken broth, balsamic vinegar, and ground cinnamon. Pour this mixture over the roast and apples.
  5. Cover the roasting pan tightly with foil and place it in the preheated oven. Roast for about one hour or until an internal temperature of at least 145°F (63°C) is reached.
  6. Once cooked, remove from oven and let rest for ten minutes before slicing. Serve drizzled with pan juices and enjoy!
