- 3–4 lbs pork loin roast
- 3 fresh apples (preferably Granny Smith)
- 1 large onion
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 5 fresh sage leaves
- 2 tsp ground cinnamon
- 1 cup low-sodium chicken broth
- 2 tbsp balsamic vinegar
Instructions
- Preheat your oven to 375°F (190°C). Prepare a roasting pan by spraying it with nonstick cooking spray.
- Season the pork loin generously with salt and pepper. Heat olive oil in a skillet over medium-high heat until shimmering. Sear the pork on all sides until golden brown, about three minutes per side.
- Transfer the seared pork to the roasting pan. Chop the apples and onion, then arrange them around the pork. Sprinkle fresh sage leaves on top.
- In a bowl, combine chicken broth, balsamic vinegar, and ground cinnamon. Pour this mixture over the roast and apples.
- Cover the roasting pan tightly with foil and place it in the preheated oven. Roast for about one hour or until an internal temperature of at least 145°F (63°C) is reached.
- Once cooked, remove from oven and let rest for ten minutes before slicing. Serve drizzled with pan juices and enjoy!
