- 3–4 boneless, skinless chicken breasts (cut into bite-sized pieces)
- 2 cloves fresh garlic (minced)
- 8 oz egg noodles (or rice noodles)
- 1 cup bell peppers (sliced)
- 2 green onions (chopped)
- 1/4 cup low-sodium soy sauce
- 2 tbsp honey
- 1 tsp sesame oil
Instructions
- Chop chicken into bite-sized pieces and mince garlic. Have all ingredients ready to go.
- Heat a large skillet over medium-high heat, add a splash of oil, and sauté chicken until golden brown and cooked through (about 6-8 minutes). Remove from the skillet and set aside.
- In the same skillet, add sliced bell peppers and minced garlic. Stir-fry for about 2 minutes until veggies are tender but still vibrant.
- In a bowl, whisk together soy sauce, honey, and sesame oil. Pour this mixture over the chicken and veggies in the skillet. Let it simmer for a few minutes until everything is coated.
- Meanwhile, cook egg noodles according to package instructions. Drain and toss them gently into the skillet with the chicken mixture.
- Transfer onto plates or bowls and sprinkle with chopped green onions before serving.
