Bright and refreshing, this Strawberry Crunch Salad combines sweet strawberries, crisp greens, and a tangy vinaigrette for a delightful dish perfect for any occasion.


Ingredients

  • 4 cups mixed greens (arugula, spinach, romaine)
  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup cucumber, sliced
  • 1/2 cup pecans, toasted (or walnuts/almonds)
  • 3 tbsp champagne vinegar (or substitute white wine vinegar)
  • 1/4 cup extra virgin olive oil
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Thoroughly wash and dry the mixed greens. Tear them into bite-sized pieces and place them in a large serving bowl.
  2. Hull and slice the fresh strawberries. Add them to the bowl with mixed greens.
  3. Slice the cucumber into thin rounds or half-moons. Toss these into the bowl with the strawberries and greens.
  4. In a dry skillet over medium heat, toast the pecans until golden brown, stirring frequently. Allow to cool before adding them to your salad.
  5. In a small bowl, whisk together champagne vinegar, olive oil, honey, salt, and pepper until well combined.
  6. Drizzle the dressing over your salad just before serving. Toss gently to ensure every leaf is coated in vinaigrette.
