- 4 cups mixed greens (arugula, spinach, romaine)
- 2 cups fresh strawberries, hulled and sliced
- 1 cup cucumber, sliced
- 1/2 cup pecans, toasted (or walnuts/almonds)
- 3 tbsp champagne vinegar (or substitute white wine vinegar)
- 1/4 cup extra virgin olive oil
- 1 tbsp honey
- Salt and pepper to taste
Instructions
- Thoroughly wash and dry the mixed greens. Tear them into bite-sized pieces and place them in a large serving bowl.
- Hull and slice the fresh strawberries. Add them to the bowl with mixed greens.
- Slice the cucumber into thin rounds or half-moons. Toss these into the bowl with the strawberries and greens.
- In a dry skillet over medium heat, toast the pecans until golden brown, stirring frequently. Allow to cool before adding them to your salad.
- In a small bowl, whisk together champagne vinegar, olive oil, honey, salt, and pepper until well combined.
- Drizzle the dressing over your salad just before serving. Toss gently to ensure every leaf is coated in vinaigrette.
- Serve immediately as an appetizer or side dish that will leave everyone wanting more!
