Ingredients

  • 4 cups water or chicken broth
  • 2 tablespoons unsalted butter
  • 1/2 cup heavy cream
  • Salt to taste
  • 1 pound fresh or frozen shrimp, thawed and peeled
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 4 green onions, thinly sliced

Instructions

  1. In a medium saucepan, bring water or chicken broth to a boil. Add salt to taste.
  2. Stir in the grits and reduce heat. Cook until thickened, approximately 5 minutes.
  3. Mix in the butter and heavy cream until smooth and creamy.
  4. While the grits are cooking, pat shrimp dry with paper towels.
  5. In a bowl, toss shrimp with Cajun seasoning until evenly coated.
  6. Heat olive oil in a large skillet over medium-high heat. Add shrimp in a single layer and cook for about 2 minutes per side until pink and opaque.
  7. Add minced garlic to the skillet with shrimp and sauté for about 30 seconds until fragrant.
  8. Squeeze lemon juice over shrimp and mix well.
  9. Spoon creamy grits into bowls.
  10. Top generously with Cajun shrimp and garnish with sliced green onions.
