  • 1 lb boneless, skinless chicken breasts
  • 1 cup fresh bell peppers (red, yellow, and green)
  • 1 cup broccoli florets
  • 1 medium carrot, thinly sliced
  • 1 cup snow peas
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey or maple syrup
  • 1 tbsp fresh ginger, grated
  • 2 garlic cloves, minced
  • 2 cups cooked wild rice

Instructions

  1. Wash and chop all vegetables. Slice chicken breasts into bite-sized pieces.
  2. In a bowl, whisk together soy sauce, honey or maple syrup, minced garlic, and grated ginger until well mixed.
  3. Heat oil in a large skillet over medium-high heat. Add chicken pieces and sauté until golden brown and cooked through (about 5-7 minutes).
  4. Toss in bell peppers, broccoli, carrots, and snow peas. Stir-fry for about 3-4 minutes until veggies are tender but still crisp.
  5. Drizzle the teriyaki sauce over the chicken and veggies. Let it simmer for an additional 2 minutes to coat everything evenly.
  6. Serve the stir-fry over fluffy wild rice. Optionally drizzle with extra sauce before serving.
