  • 1/2 cup cocoa powder
  • 1 cup granulated sugar
  • 4 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1/4 cup unsalted butter (softened)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a jelly roll pan with parchment paper and lightly grease it.
  2. In a bowl, whisk together flour, cocoa powder, sugar, and salt.
  3. In a separate bowl, beat the eggs until fluffy. Gradually combine the dry ingredients with the egg mixture and add vanilla extract until well mixed.
  4. Spread the batter evenly in the prepared pan. Bake for about 12-15 minutes or until a toothpick comes out clean.
  5. While baking, prepare a clean kitchen towel dusted with powdered sugar. Once baked, remove from oven and invert onto the sugared towel. Carefully peel off the parchment paper and roll up the sponge tightly while it's warm. Let it cool completely.
  6. In a mixing bowl, whip heavy cream until soft peaks form. Gradually add powdered sugar and continue whipping until stiff peaks form.
  7. Gently fold softened butter into whipped cream until combined.
  8. Unroll your cooled sponge carefully and spread an even layer of whipped cream filling across it.
  9. Roll it back up without the towel and place seam-side down on your serving platter.
  10. Dust with cocoa powder or powdered sugar for decoration.
