Ingredients

  • 2 tsp ground ginger
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 3/4 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 cup white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, ground ginger, baking soda, cinnamon, and salt.
  3. In another bowl, beat softened butter, brown sugar, and granulated sugar until light and fluffy (about 3 minutes).
  4. Mix in the egg until well combined.
  5. Gradually add the dry ingredient mixture to the wet ingredients and mix until just combined.
  6. Scoop tablespoon-sized balls of dough onto prepared baking sheets about two inches apart.
  7. Bake for about 10 minutes or until golden brown around the edges but still soft in the center. Let cool on wire racks.
  8. Once cooled, melt white chocolate chips in a microwave-safe bowl or over a double boiler until smooth.
  9. Dip half of each cookie into the melted white chocolate and set on wax paper to cool.
