- 2 tbsp olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 medium carrot, diced
- 1 celery stalk, diced
- 28 oz canned crushed tomatoes
- 2 tbsp tomato paste
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
Instructions
- In a large skillet or saucepan, heat olive oil over medium heat. Add chopped onion, carrot, and celery. Sauté until softened (about 5 minutes), then stir in minced garlic for an additional minute until fragrant.
- Increase heat slightly and add ground turkey to the skillet. Cook until browned thoroughly, breaking apart with a wooden spoon.
- Stir in tomato paste briefly before adding crushed tomatoes. Break up any whole tomatoes if necessary.
- Sprinkle oregano and basil over the mixture along with salt and pepper. Stir well to combine.
- Reduce heat to low; cover slightly ajar and let simmer for at least 30 minutes, stirring occasionally.
- Serve over your favorite pasta or zucchini noodles! Garnish with fresh basil if desired.
