  • 1 lb ground turkey (85% lean)
  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, diced
  • 1 celery stalk, diced
  • 28 oz canned crushed tomatoes
  • 2 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions

  1. In a large skillet or saucepan, heat olive oil over medium heat. Add chopped onion, carrot, and celery. Sauté until softened (about 5 minutes), then stir in minced garlic for an additional minute until fragrant.
  2. Increase heat slightly and add ground turkey to the skillet. Cook until browned thoroughly, breaking apart with a wooden spoon.
  3. Stir in tomato paste briefly before adding crushed tomatoes. Break up any whole tomatoes if necessary.
  4. Sprinkle oregano and basil over the mixture along with salt and pepper. Stir well to combine.
  5. Reduce heat to low; cover slightly ajar and let simmer for at least 30 minutes, stirring occasionally.
  6. Serve over your favorite pasta or zucchini noodles! Garnish with fresh basil if desired.
