Description

Warm, creamy, and bursting with flavor, this Sweet Potato Curry is your perfect companion for a cozy evening.

Ingredients

Scale
  • 2 medium sweet potatoes (about 500g), peeled and cubed
  • 1 can (400ml) full-fat coconut milk
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 2 tbsp curry powder
  • 2 cups low-sodium vegetable broth
  • 2 cups spinach or kale, roughly chopped

Instructions

  1. Prep Your Ingredients: Peel and cube the sweet potatoes. Mince the garlic and ginger, and finely chop the onion.
  2. Sauté Aromatics: In a large pot over medium heat, add a splash of oil. Sauté the diced onions until translucent (about 5 minutes). Add minced garlic and ginger, stirring until fragrant.
  3. Add Spices: Sprinkle in the curry powder and stir well to coat the onions. Toast for about a minute to enhance flavors.
  4. Introduce Sweet Potatoes: Add sweet potato cubes along with vegetable broth and coconut milk. Bring to a gentle simmer, cover, and cook for about 20 minutes until sweet potatoes are tender.
  5. Stir in Greens: Once sweet potatoes are soft enough to pierce with a fork, stir in spinach or kale until wilted (around 2 minutes).
  6. Serve It Up: Taste and adjust seasoning if necessary. Serve hot in bowls, garnished with fresh cilantro or a squeeze of lime juice if desired.
