- 3 lbs chuck roast
- 1 medium sweet onion, chopped
- 4 cloves garlic, minced
- 1 cup ketchup
- 1/4 cup brown sugar
- 1/4 cup apple cider vinegar
- 2 tbsp smoked paprika
Instructions
- Gather all ingredients and chop the onion and mince the garlic finely.
- Heat a tablespoon of oil in a large skillet over medium-high heat. Season the chuck roast generously with salt and pepper. Sear on both sides until golden brown.
- In a bowl, mix together ketchup, brown sugar, apple cider vinegar, smoked paprika, minced garlic, and chopped onion.
- Place the seared roast into a slow cooker or Dutch oven. Pour the sauce over the top and cover tightly. Slow cook on low for about 8 hours or in an oven preheated to 300°F (150°C) for about 4 hours.
- Once cooked to fork-tender perfection, remove the roast from the pot and shred using two forks. Mix some sauce back in to keep it juicy.
- Spoon generous portions onto toasted buns or serve over rice. Add extra sauce if desired and enjoy!
