Description

  • 3 lbs chuck roast
  • 1 medium sweet onion, chopped
  • 4 cloves garlic, minced
  • 1 cup ketchup
  • 1/4 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 2 tbsp smoked paprika

Instructions

  1. Gather all ingredients and chop the onion and mince the garlic finely.
  2. Heat a tablespoon of oil in a large skillet over medium-high heat. Season the chuck roast generously with salt and pepper. Sear on both sides until golden brown.
  3. In a bowl, mix together ketchup, brown sugar, apple cider vinegar, smoked paprika, minced garlic, and chopped onion.
  4. Place the seared roast into a slow cooker or Dutch oven. Pour the sauce over the top and cover tightly. Slow cook on low for about 8 hours or in an oven preheated to 300°F (150°C) for about 4 hours.
  5. Once cooked to fork-tender perfection, remove the roast from the pot and shred using two forks. Mix some sauce back in to keep it juicy.
  6. Spoon generous portions onto toasted buns or serve over rice. Add extra sauce if desired and enjoy!
