Description

Ingredients

  • 3 lbs chuck roast
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 2 tbsp smoked paprika
  • 1 tsp cayenne pepper (adjust to taste)
  • 2 tbsp brown sugar
  • Salt and pepper to taste
  • 1 cup ketchup (preferably organic)
  • 1/4 cup apple cider vinegar

Instructions

  1. Chop the onion and mince the garlic.
  2. In a small bowl, combine smoked paprika, cayenne pepper, brown sugar, salt, and pepper.
  3. Rub the spice mixture thoroughly over the chuck roast.
  4. In a skillet, sauté onions and garlic until golden brown for added flavor.
  5. Place the seasoned beef into your slow cooker. Add sautéed onions and garlic, followed by ketchup and apple cider vinegar.
  6. Set your slow cooker on low for about 8 hours or high for 4 hours until tender. Shred beef with two forks in the juices before serving.
