- 3 lbs chuck roast
- 1 large yellow onion, chopped
- 4 cloves garlic, minced
- 2 tbsp smoked paprika
- 1 tsp cayenne pepper (adjust to taste)
- 2 tbsp brown sugar
- Salt and pepper to taste
- 1 cup ketchup (preferably organic)
- 1/4 cup apple cider vinegar
Instructions
- Chop the onion and mince the garlic.
- In a small bowl, combine smoked paprika, cayenne pepper, brown sugar, salt, and pepper.
- Rub the spice mixture thoroughly over the chuck roast.
- In a skillet, sauté onions and garlic until golden brown for added flavor.
- Place the seasoned beef into your slow cooker. Add sautéed onions and garlic, followed by ketchup and apple cider vinegar.
- Set your slow cooker on low for about 8 hours or high for 4 hours until tender. Shred beef with two forks in the juices before serving.
