Description

  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz fresh mushrooms (button or cremini)
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 8 oz cream cheese
  • 2 tbsp Dijon mustard
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Chop the onions and mushrooms while mincing the garlic.
  2. Place chicken breasts at the bottom of the slow cooker. Add onions and mushrooms on top.
  3. In a bowl, combine cream cheese, Dijon mustard, garlic, and chicken broth until smooth. Pour this mixture over the chicken and vegetables.
  4. Cover the slow cooker and cook on low for 6-7 hours or high for 3-4 hours.
  5. Once cooked through (internal temperature should reach at least 165°F), stir in fresh parsley just before serving.
