- 8 oz fresh mushrooms (button or cremini)
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 1 cup low-sodium chicken broth
- 8 oz cream cheese
- 2 tbsp Dijon mustard
- 2 tbsp fresh parsley, chopped
Instructions
- Chop the onions and mushrooms while mincing the garlic.
- Place chicken breasts at the bottom of the slow cooker. Add onions and mushrooms on top.
- In a bowl, combine cream cheese, Dijon mustard, garlic, and chicken broth until smooth. Pour this mixture over the chicken and vegetables.
- Cover the slow cooker and cook on low for 6-7 hours or high for 3-4 hours.
- Once cooked through (internal temperature should reach at least 165°F), stir in fresh parsley just before serving.
- Plate servings with a generous drizzle of sauce. Enjoy with rice or bread to soak up all the goodness!
