  • 1 cup cranberry sauce
  • 1/2 cup balsamic vinegar
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 325°F (160°C) and prepare a heavy-duty roasting pan or Dutch oven.
  2. Generously season the chuck roast with salt and pepper. In a hot pan with olive oil, sear the roast on all sides until golden brown.
  3. Remove the roast and set aside. In the same pan, add sliced onions and minced garlic. Sauté until fragrant and translucent, about five minutes.
  4. In a bowl, mix together cranberry sauce, balsamic vinegar, and beef broth. Pour this mixture into the pan with onions and garlic. Stir well.
  5. Return the chuck roast to the pan, cover tightly with foil or a lid, and braise in the oven for about three hours or until fork-tender.
  6. Once done, let the roast rest for ten minutes before slicing. Serve each slice topped with the cranberry balsamic glaze.
