- 3–4 boneless, skinless chicken breasts
- 1 lb baby potatoes
- 1 bell pepper (sliced)
- 1 zucchini (sliced)
- 1 cup broccoli florets
- 1 cup shredded mozzarella cheese
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Prepare a rimmed baking sheet.
- Season the chicken breasts with salt, pepper, garlic powder, and Italian seasoning. Rub the spices in thoroughly.
- Halve the baby potatoes. Slice the bell pepper and zucchini. Toss the veggies in a bowl with olive oil and a pinch of salt.
- Place seasoned chicken breasts on one side of the baking sheet. Spread the mixed vegetables evenly on the other side.
- Insert the baking sheet into the oven for about 25 minutes. Stir halfway through cooking for even roasting.
- In the last five minutes, sprinkle shredded mozzarella over everything and bake until melted and golden brown.
- Drizzle any remaining olive oil over the dish before serving. Enjoy your meal!
