  • 34 boneless, skinless chicken breasts
  • 1 lb baby potatoes
  • 1 bell pepper (sliced)
  • 1 zucchini (sliced)
  • 1 cup broccoli florets
  • 1 cup shredded mozzarella cheese
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Prepare a rimmed baking sheet.
  2. Season the chicken breasts with salt, pepper, garlic powder, and Italian seasoning. Rub the spices in thoroughly.
  3. Halve the baby potatoes. Slice the bell pepper and zucchini. Toss the veggies in a bowl with olive oil and a pinch of salt.
  4. Place seasoned chicken breasts on one side of the baking sheet. Spread the mixed vegetables evenly on the other side.
  5. Insert the baking sheet into the oven for about 25 minutes. Stir halfway through cooking for even roasting.
