  • 34 boneless skinless chicken breasts
  • 1 cup cherry tomatoes
  • 1 green bell pepper (or red/yellow for variation)
  • 1 cup pitted Kalamata olives
  • 1 cup crumbled feta cheese
  • 4 cloves fresh garlic
  • 2 tsp dried oregano
  • 3 tbsp extra virgin olive oil

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking sheet with nonstick cooking spray.
  2. Season the chicken breasts generously with salt, pepper, and dried oregano.
  3. Chop the cherry tomatoes and green bell pepper into bite-sized pieces. Arrange them on the baking sheet around the chicken along with Kalamata olives.
  4. Mince the garlic cloves and sprinkle them over the chicken and vegetables. Drizzle olive oil over the entire sheet pan.
