- 3–4 boneless skinless chicken breasts
- 1 cup cherry tomatoes
- 1 green bell pepper (or red/yellow for variation)
- 1 cup pitted Kalamata olives
- 1 cup crumbled feta cheese
- 4 cloves fresh garlic
- 2 tsp dried oregano
- 3 tbsp extra virgin olive oil
Instructions
- Preheat your oven to 400°F (200°C) and lightly spray a baking sheet with nonstick cooking spray.
- Season the chicken breasts generously with salt, pepper, and dried oregano.
- Chop the cherry tomatoes and green bell pepper into bite-sized pieces. Arrange them on the baking sheet around the chicken along with Kalamata olives.
- Mince the garlic cloves and sprinkle them over the chicken and vegetables. Drizzle olive oil over the entire sheet pan.
- Crumble feta cheese generously over all ingredients.
- Bake in the preheated oven for about 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
