Ingredients
Scale
- 3–4 boneless, skinless chicken breasts
- 1 pound baby potatoes, halved
- 2 fresh lemons (juice and zest)
- 3 tablespoons olive oil
- 4 garlic cloves, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat Your Oven: Preheat the oven to 400°F (200°C). Prepare a large sheet pan by lightly spraying it with nonstick cooking spray.
- Prepare the Marinade: In a mixing bowl, whisk together olive oil, juice from both lemons (reserve some zest), minced garlic, thyme, oregano, salt, and pepper until well combined.
- Marinate the Chicken: Place chicken breasts in a resealable plastic bag or shallow dish. Pour half of the marinade over the chicken, ensuring it is well coated. Let it marinate while you prep the potatoes.
- Prep the Potatoes: Halve baby potatoes for even cooking. Toss them in the remaining marinade until they are evenly coated.
- Assemble on the Sheet Pan: Arrange marinated chicken in the center of the sheet pan with potatoes surrounding it. Sprinkle reserved lemon zest on top for added flavor.
- Roast Everything Together: Place the sheet pan in the preheated oven and roast for about 25–30 minutes or until chicken is cooked through (165°F / 74°C) and potatoes are tender.
- Serve: Transfer to plates and drizzle any leftover marinade from the pan over the dish for an extra burst of flavor.
