Instructions
- Preheat your oven to 400°F (200°C).
- Wash and halve the baby potatoes. Peel and slice the carrots into sticks.
- In a large bowl, combine the turkey breast, potatoes, and carrots. Drizzle with olive oil and sprinkle generously with salt, pepper, and fresh herbs. Toss until well coated.
- Spread the seasoned mixture evenly on a sheet pan lined with parchment paper.
