- 3–4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 1/2 cup balsamic vinegar
- 1/3 cup fig jam
- 2 medium red onions, cut into wedges
- 2 cups fresh grapes (red or green)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, season the chicken breasts with salt and pepper. Drizzle with olive oil and toss to coat evenly.
- In another bowl, whisk together balsamic vinegar and fig jam until smooth.
- Place the seasoned chicken breasts on one side of the baking sheet.
- Scatter red onion wedges and grapes around the chicken.
- Drizzle the balsamic fig sauce over the chicken and vegetables.
- Roast in the preheated oven for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
- Let rest for five minutes before serving, drizzling extra sauce from the pan on top.
