  • 34 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1/2 cup balsamic vinegar
  • 1/3 cup fig jam
  • 2 medium red onions, cut into wedges
  • 2 cups fresh grapes (red or green)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, season the chicken breasts with salt and pepper. Drizzle with olive oil and toss to coat evenly.
  3. In another bowl, whisk together balsamic vinegar and fig jam until smooth.
  4. Place the seasoned chicken breasts on one side of the baking sheet.
  5. Scatter red onion wedges and grapes around the chicken.
