- 6 cloves Garlic, whole
- 4 tbsp Olive Oil, divided
- 2 tbsp Lemon Juice, freshly squeezed
- 1/2 cup Parmesan Cheese, grated
- 1 tbsp Dijon Mustard
- 1 tsp Worcestershire Sauce
Instructions
- 1. Roast the Garlic: Preheat your oven to 375°F (190°C). Peel the garlic cloves and toss them in 2 tablespoons of olive oil with a pinch of salt. Wrap the garlic in aluminum foil and roast for about 30 minutes until soft and fragrant.
- 2. Prepare the Kale: While the garlic is roasting, rinse the curly kale under cold water until clean. Remove tough stems and tear the leaves into bite-sized pieces. Place them in a large mixing bowl.
- 3. Make the Dressing: In a small bowl, combine the roasted garlic (squeezed out of its skin), Dijon mustard, Worcestershire sauce, lemon juice, and remaining 2 tablespoons of olive oil. Whisk until creamy.
- 4. Combine Everything: Pour the dressing over the kale. Use your hands to massage it into every leaf to enhance flavor absorption.
- 5. Add Cheese: Sprinkle grated Parmesan cheese over the salad and toss gently to combine.
