  • 6 cups Curly Kale, washed and torn into bite-sized pieces
  • 6 cloves Garlic, whole
  • 4 tbsp Olive Oil, divided
  • 2 tbsp Lemon Juice, freshly squeezed
  • 1/2 cup Parmesan Cheese, grated
  • 1 tbsp Dijon Mustard
  • 1 tsp Worcestershire Sauce

Instructions

  1. 1. Roast the Garlic: Preheat your oven to 375°F (190°C). Peel the garlic cloves and toss them in 2 tablespoons of olive oil with a pinch of salt. Wrap the garlic in aluminum foil and roast for about 30 minutes until soft and fragrant.
  2. 2. Prepare the Kale: While the garlic is roasting, rinse the curly kale under cold water until clean. Remove tough stems and tear the leaves into bite-sized pieces. Place them in a large mixing bowl.
  3. 3. Make the Dressing: In a small bowl, combine the roasted garlic (squeezed out of its skin), Dijon mustard, Worcestershire sauce, lemon juice, and remaining 2 tablespoons of olive oil. Whisk until creamy.
