- 1.5 lbs steak tips (sirloin or ribeye)
- 4 cloves fresh garlic, minced
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp pepper
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 1 cup bell peppers, sliced
- 1 cup zucchini, sliced
- 1 cup cherry tomatoes
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine steak tips with olive oil, minced garlic, salt, pepper, rosemary, and thyme. Toss until well coated and let marinate for about 15 minutes.
- Wash and chop bell peppers into strips and zucchini into rounds. Leave cherry tomatoes whole.
- On a large baking sheet lined with parchment paper, spread out marinated steak tips and chopped vegetables evenly. Drizzle any remaining marinade over the top.
- Place the baking sheet in the preheated oven and roast for about 20-25 minutes until steak is cooked to desired doneness and vegetables are tender.
- Transfer to plates or serve family-style from the baking sheet. Garnish with extra herbs if desired.
