  • 1.5 lbs steak tips (sirloin or ribeye)
  • 4 cloves fresh garlic, minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 1 cup bell peppers, sliced
  • 1 cup zucchini, sliced
  • 1 cup cherry tomatoes

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine steak tips with olive oil, minced garlic, salt, pepper, rosemary, and thyme. Toss until well coated and let marinate for about 15 minutes.
  3. Wash and chop bell peppers into strips and zucchini into rounds. Leave cherry tomatoes whole.
  4. On a large baking sheet lined with parchment paper, spread out marinated steak tips and chopped vegetables evenly. Drizzle any remaining marinade over the top.
  5. Place the baking sheet in the preheated oven and roast for about 20-25 minutes until steak is cooked to desired doneness and vegetables are tender.
  6. Transfer to plates or serve family-style from the baking sheet. Garnish with extra herbs if desired.
