Instructions
- In a large pot over medium heat, drizzle olive oil. Add chopped onions and sauté until golden brown.
- Stir in minced garlic and cook for another minute until fragrant.
- Push aside the onions and garlic; add ground beef or turkey. Cook until browned, breaking it apart with a wooden spoon.
- Mix in the drained beans and diced tomatoes. Stir well to combine.
- Sprinkle chili powder along with salt and pepper. Stir to evenly distribute spices.
- Pour in vegetable broth or water just to cover everything lightly. Bring to a low boil, then reduce heat and cover.
- Let it simmer for about 30 minutes, stirring occasionally.
- Serve hot topped with sour cream, cheese, and cilantro.
