  • 8 lasagna noodles
  • 2 cups fresh spinach
  • 1 cup cremini mushrooms, sliced
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese (divided)
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Pinch of nutmeg (optional)
  • 2 cups marinara sauce
  • 1 tablespoon olive oil

Instructions

  1. Cook lasagna noodles according to package instructions until al dente. Drain and lay flat on parchment paper.
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add sliced mushrooms and spinach to the skillet. Cook until softened, then season with salt, pepper, and nutmeg.
  4. In a mixing bowl, combine ricotta cheese, half of the mozzarella cheese, sautéed vegetables, Parmesan cheese, salt, and pepper. Mix well.
  5. Preheat oven to 375°F (190°C).
  6. Spread half of the marinara sauce at the bottom of a baking dish.
  7. Take one noodle at a time, spread about two tablespoons of filling along its length, then roll it up and place seam-side down in the baking dish.
  8. Repeat with all noodles, arranging them snugly in the dish.
  9. Pour remaining marinara sauce over the roll-ups and sprinkle with remaining mozzarella cheese.
  10. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15–20 minutes or until bubbly and golden brown.
