- 8 lasagna noodles
- 2 cups fresh spinach
- 1 cup cremini mushrooms, sliced
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese (divided)
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- Pinch of nutmeg (optional)
- 2 cups marinara sauce
- 1 tablespoon olive oil
Instructions
- Cook lasagna noodles according to package instructions until al dente. Drain and lay flat on parchment paper.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Add sliced mushrooms and spinach to the skillet. Cook until softened, then season with salt, pepper, and nutmeg.
- In a mixing bowl, combine ricotta cheese, half of the mozzarella cheese, sautéed vegetables, Parmesan cheese, salt, and pepper. Mix well.
- Preheat oven to 375°F (190°C).
- Spread half of the marinara sauce at the bottom of a baking dish.
- Take one noodle at a time, spread about two tablespoons of filling along its length, then roll it up and place seam-side down in the baking dish.
- Repeat with all noodles, arranging them snugly in the dish.
- Pour remaining marinara sauce over the roll-ups and sprinkle with remaining mozzarella cheese.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15–20 minutes or until bubbly and golden brown.
