- 1 red bell pepper, diced
- 1 yellow onion, diced
- 1/4 cup pure maple syrup
- 2 tbsp extra virgin olive oil
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and cube the sweet potatoes, slice the sausage, and dice the bell pepper and onion.
- In a large mixing bowl, combine sweet potatoes, sausage, bell pepper, onion, olive oil, thyme, salt, and pepper. Drizzle in the maple syrup and mix until well-coated.
- Transfer the mixture onto a baking sheet lined with parchment paper. Spread it evenly for optimal roasting.
- Bake in the preheated oven for about 25-30 minutes or until golden brown. Stir halfway through for even cooking.
