  • 1 red bell pepper, diced
  • 1 yellow onion, diced
  • 1/4 cup pure maple syrup
  • 2 tbsp extra virgin olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes, slice the sausage, and dice the bell pepper and onion.
