Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 3 tbsp pure maple syrup
  • 2 tsp chipotle powder
  • Juice of 1 lemon
  • 2 medium sweet potatoes (about 1 lb), peeled and cubed
  • 8 oz fresh green beans, trimmed
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. In a mixing bowl, toss cubed sweet potatoes with olive oil, salt, and pepper.
  3. Spread seasoned sweet potatoes on one side of the baking sheet. Roast for about 20 minutes until tender.
  4. In a small bowl, whisk together maple syrup, chipotle powder, and lemon juice. Place salmon fillets on the other side of the baking sheet.
  5. Toss trimmed green beans in olive oil with salt and pepper. Scatter them around the salmon on the baking sheet.
  6. Drizzle half of the maple-chipotle mixture over salmon fillets and vegetables. Bake for an additional 15-20 minutes until salmon flakes easily with a fork.
  7. Transfer to plates and drizzle with remaining sauce for added flavor.
