- 1 cup long-grain white rice
- 1 cup bell peppers (mixed red and green), chopped

- 2 cups low-sodium chicken broth
- 1 tsp dried oregano
Instructions
- Turn your Instant Pot to sauté mode. Add a drizzle of olive oil and brown the sliced Italian sausage for about 5-7 minutes until golden and fragrant. Remove and set aside.
- In the same pot, add the chopped onions and bell peppers. Sauté for approximately 3-4 minutes until softened.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Return the browned sausage to the pot. Pour in rinsed long-grain white rice, dried oregano, and chicken broth. Stir gently to combine.
- Securely close the lid of the Instant Pot. Set it to high pressure for 10 minutes. Once cooking is complete, allow natural pressure release for 5 minutes before switching to quick release.
- Carefully open the lid, fluff with a fork, and serve hot garnished with fresh parsley if desired.
