  • 1 lb Italian sausage (mild or spicy)
  • 1 cup long-grain white rice
  • 1 cup bell peppers (mixed red and green), chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 tsp dried oregano

Instructions

  1. Turn your Instant Pot to sauté mode. Add a drizzle of olive oil and brown the sliced Italian sausage for about 5-7 minutes until golden and fragrant. Remove and set aside.
  2. In the same pot, add the chopped onions and bell peppers. Sauté for approximately 3-4 minutes until softened.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Return the browned sausage to the pot. Pour in rinsed long-grain white rice, dried oregano, and chicken broth. Stir gently to combine.
  5. Securely close the lid of the Instant Pot. Set it to high pressure for 10 minutes. Once cooking is complete, allow natural pressure release for 5 minutes before switching to quick release.
  6. Carefully open the lid, fluff with a fork, and serve hot garnished with fresh parsley if desired.
