Ingredients

Scale
  • 1.5 lbs boneless chicken thighs
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 cup dried apricots
  • 1/2 cup sliced almonds (toasted)
  • 1 tsp ground cinnamon
  • 2 tsp ground cumin
  • Salt and pepper to taste

Instructions

  1. Prepare Your Ingredients: Gather all ingredients. Dice the onion and mince the garlic.
  2. Sauté Aromatics: Set your Instant Pot to 'Sauté.' Add 2 tbsp olive oil and sauté onions and garlic until translucent, about 3-4 minutes.
  3. Brown the Chicken: Add boneless chicken thighs to the pot, season with salt, pepper, cumin, and cinnamon. Cook until golden brown on both sides, about 5 minutes.
  4. Add Fruits & Broth: Stir in dried apricots and toasted almonds. Pour in chicken broth and mix well.
  5. Pressure Cook Time: Secure the lid on your Instant Pot. Set it to cook on high pressure for 10 minutes.
  6. Release & Serve: After cooking, perform a quick release of pressure. Stir gently before serving over couscous or rice. Drizzle with sauce for added flavor.
