  • ½ cup melted butter
  • 1 tsp pure peppermint extract
  • 1 cup softened butter
  • 4 cups powdered sugar
  • 2 tsp pure peppermint extract
  • Crushed candy canes (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two round cake pans with butter or cooking spray.
  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until combined.
  3. In another bowl, beat the eggs, milk, melted butter, and peppermint extract until smooth. Pour this mixture into the dry ingredients and mix until just combined.
  4. Divide the batter evenly between the prepared pans and bake for about 25-30 minutes or until a toothpick inserted comes out clean.
  5. Allow cakes to cool in pans for about ten minutes before transferring them to wire racks to cool completely.
  6. In a mixing bowl, combine softened butter with powdered sugar and peppermint extract until fluffy.
  7. Spread frosting generously between layers and over the top of the cooled cakes.
  8. Sprinkle crushed candy canes on top for decoration.
