  • 1 cup tri-color quinoa, rinsed
  • 2 cups low-sodium vegetable broth
  • 1/2 cup fresh parsley, chopped
  • 2 medium carrots, diced

  • 2 tbsp extra virgin olive oil

Instructions

  1. Rinse quinoa under cold water in a fine-mesh strainer.
  2. In a large saucepan, heat olive oil over medium heat. Add onion, carrots, and bell peppers. Sauté for about five minutes until softened.
  3. Stir in the rinsed quinoa and toast lightly for two minutes until aromatic.
  4. Pour in vegetable broth and add salt. Bring to a boil, then reduce heat to low.
  5. Cover and simmer for 15 minutes or until all liquid is absorbed. Let sit covered for five additional minutes.
  6. Fluff quinoa with a fork and stir in chopped parsley before serving.
