- 2 cups low-sodium vegetable broth
- 1/2 cup fresh parsley, chopped
- 2 medium carrots, diced

- 2 tbsp extra virgin olive oil

Instructions
- Rinse quinoa under cold water in a fine-mesh strainer.
- In a large saucepan, heat olive oil over medium heat. Add onion, carrots, and bell peppers. Sauté for about five minutes until softened.
- Stir in the rinsed quinoa and toast lightly for two minutes until aromatic.
- Pour in vegetable broth and add salt. Bring to a boil, then reduce heat to low.
- Cover and simmer for 15 minutes or until all liquid is absorbed. Let sit covered for five additional minutes.
- Fluff quinoa with a fork and stir in chopped parsley before serving.
