- 1–2 pounds pork tenderloin
- 2 tablespoons fresh rosemary, chopped
- 4 cloves garlic, minced
- 3 tablespoons extra virgin olive oil
- Salt and pepper to taste
- 1 pound baby potatoes, halved
- Olive oil, for tossing
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, mix minced garlic, chopped rosemary, salt, pepper, and olive oil to form a paste. Rub this mixture all over the pork tenderloin.
- Toss halved baby potatoes in olive oil along with salt and pepper.
- Arrange them around the edges of a lightly greased baking dish.
- Place the seasoned pork tenderloin in the center of the baking dish.
- Roast in the oven for about 25-30 minutes until the internal temperature reaches 145°F (63°C).
- Remove from oven and let rest for five minutes before slicing.
- Slice the tenderloin into medallions and serve alongside the roasted potatoes.
- Drizzle with pan juices for added flavor.
