  • 4 large flour tortillas
  • 2 cups shredded Monterey Jack and cheddar cheese
  • 1 cup bell peppers, thinly sliced (any color)
  • 1 cup cooked chicken, shredded, or 1 can of black beans, rinsed
  • 1/2 cup salsa
  • 1 cup guacamole
  • 1/2 cup sour cream

Instructions

  1. Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly spray it with nonstick cooking spray.
  2. Chop bell peppers into thin strips. If using chicken, shred it. Rinse black beans if chosen as the protein.
  3. Place two tortillas on the prepared baking sheet. On one half of each tortilla, sprinkle a generous layer of cheese. Add layers of chicken or black beans, bell peppers, and salsa before topping with more cheese and folding the other half over.
  4. Bake in the preheated oven for about 15-20 minutes or until golden brown and crispy.
