- 4 large flour tortillas
- 2 cups shredded Monterey Jack and cheddar cheese
- 1 cup bell peppers, thinly sliced (any color)
- 1 cup cooked chicken, shredded, or 1 can of black beans, rinsed
- 1/2 cup salsa
- 1 cup guacamole
- 1/2 cup sour cream
Instructions
- Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly spray it with nonstick cooking spray.
- Chop bell peppers into thin strips. If using chicken, shred it. Rinse black beans if chosen as the protein.
- Place two tortillas on the prepared baking sheet. On one half of each tortilla, sprinkle a generous layer of cheese. Add layers of chicken or black beans, bell peppers, and salsa before topping with more cheese and folding the other half over.
- Bake in the preheated oven for about 15-20 minutes or until golden brown and crispy.
- Allow to cool slightly before slicing into wedges. Serve hot with guacamole and sour cream on the side for dipping.
