  • 2 duck breasts (skin on)
  • Salt and pepper to taste
  • 1 cup fresh orange juice (from about 3 oranges)
  • 2 tbsp honey
  • 1 tbsp red wine vinegar
  • 1 cup chicken stock
  • 2 tbsp butter

Instructions

  1. Score the skin of each duck breast in a crisscross pattern, careful not to cut into the meat.
  2. Season both sides generously with salt and pepper.
  3. Place duck breasts skin-side down in a cold skillet over medium heat. Cook for 6-8 minutes until the skin is crispy.
  4. Flip the breasts and cook for an additional 4-5 minutes until medium rare. Transfer to a cutting board and let rest.
  5. In the same skillet, drain excess fat, leaving about two tablespoons.
  6. Add orange juice, honey, red wine vinegar, and chicken stock; simmer for 5-7 minutes until thickened.
  7. Stir in butter until melted and smooth.
