- Salt and pepper to taste
- 1 cup fresh orange juice (from about 3 oranges)
- 2 tbsp honey
- 1 tbsp red wine vinegar
- 1 cup chicken stock
- 2 tbsp butter
Instructions
- Score the skin of each duck breast in a crisscross pattern, careful not to cut into the meat.
- Season both sides generously with salt and pepper.
- Place duck breasts skin-side down in a cold skillet over medium heat. Cook for 6-8 minutes until the skin is crispy.
- Flip the breasts and cook for an additional 4-5 minutes until medium rare. Transfer to a cutting board and let rest.
- In the same skillet, drain excess fat, leaving about two tablespoons.
- Add orange juice, honey, red wine vinegar, and chicken stock; simmer for 5-7 minutes until thickened.
- Stir in butter until melted and smooth.
